Why Eggs Keep Wrinkles At Bay

Eggs are a miraculous food. They can be eaten in so many ways from boiled to poached, scrambled or fried. They also can be mixed with so many ingredients to actually enhance their taste. They make a fantastic breakfast, dinner or lunch option. They fill you up and make you feel really good because of the Vitamin B12 found inside which is simply amazing for brain and nervous system functions and blood formation. They also contain a range of other super-important vitamins and minerals. But did you know they are excellent for the skin too? They are very rich in two key skin-smoothing (i.e. wrinkle ironing) nutrients.

Eggs’ Amazing Key Nutrients

So what exactly do eggs contain that make them so good for the skin? Lutein and choline are the answers.

Lutein

Lutein is a carotenoid antioxidant that helps preserve the elasticity of the skin (and who doesn’t want that!?) and prevents free radical damage to skin cells.

Research has shown that our bodies may absorb lutein more efficiently from eggs than from other sources such as leafy greens. By eating an egg a day you are able to boost your lutein levels by 26 percent.

Choline

Choline is part of the Vitamin B family and helps contribute towards fatty portions of cell membranes. It is exceptionally necessary for healthy skin cell functioning. Choline is great as it also helps your body keep up proper levels of other Vitamin Bs. The reason that it is so important is that your skin uses Vitamin Bs to create energy and make collagen and elastin. Those are the two rubbery proteins that we all so desire as they keep our skin looking smooth and firm.

The body produces choline but you need to extract it out of food as well. By ingesting two eggs a day, you provide the body with roughly 280 milligrams which are around half the daily recommended amount. Other great sources are milk and peanuts.

Slow-Cooked Scrambled Eggs With Green Herbs from Ina Garten which serves 4.

Ingredients:

  • 10 Extra Large Eggs
  • 6 Tablespoons Whole Milk Or Half-And -Half
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Freshly Ground Pepper
  • 2 Tablespoons Minced Fresh Parsley
  • 2 Tablespoons Minced Scallions, White, And Green Parts
  • 2 Tablespoons Minced Fresh Dill
  • 2 Tablespoons Unsalted Butter

Method:

  • Whisk together the eggs, milk, salt, pepper, parsley, scallions and dill.
  • Melt the butter in an omelet pan or large saute.
  • Add the egg mixture and cook them over low heat, folding them over continuously with a rubber spatula, until the desired doneness.
  • Check for seasonings.
  • Serve hot.

Classic Egg Salad

A beautiful egg salad that works every time and serves 4.

Ingredients:

  • 6 Large Eggs
  • ⅓ Cup Mayonnaise
  • 1 Stalk Celery, Finely Chopped
  • ½ Small Onion, Finely Chopped
  • 1 Tablespoon Chopped Fresh Parsley Or Dill
  • 2 Teaspoons Dijon Mustard
  • 1 Tablespoon Lemon Juice
  • Kosher Salt And Freshly Ground Black Pepper

Method:

1.

  • Cover the eggs with 2 inches of water in a medium saucepan and bring to a boil.
  • Remove from the heat, cover and let sit for 10 minutes.
  • Transfer the eggs to a bowl of ice water to cool down completely.

2.

  • Mix together the mayonnaise, celery, onions, parsley, mustard, lemon juice, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl.
  • Peel and roughly chop the eggs, and add to the mayonnaise mixture and toss gently to combine.
  • Serve right away, or cover and refrigerate for up to 2 days.
