  • Cut up all the fruit except the orange and place in a big bowl
  • Juice the oranges
  • Pour the orange juice over the rest of the fruit
  • Enjoy!

Vitamin E acts as a strong antioxidant. It works very well together with Vitamin C. Vitamin E is involved in the stabilization of the cell membrane. This is a delicious salad for lunch or dinner!

It serves 4.

Ingredients:

  • 1 Head of Spinach
  • 1 cup Almonds (cubed)
  • 1 cup Avocado
  • 1 cup Sunflower Seeds
  • 1 Large Baked Sweet Potato
  • 1 Large Trout (small slices)*
  • Olive Oil

The trout can be left out for a purely vegan/vegetarian option. This salad serves 4.

Method:

  • Bake the sweet potato and cube when ready
  • Cut up the spinach and place in bowl as your base
  • Break the almonds in half and throw into salad
  • Place the sweet potato into the salad
  • Place the sliced trout into the salad
  • Place the avocado cubes into the salad
  • Throw the sunflower seeds over the entire salad
  • Drizzle olive oil (as much as you desire) over the salad
  • Enjoy!
